Recipe for fried zucchini with tomatoes:

Ingredients:

Zucchini - 4 medium
Tomatoes - 3 medium
Onion - 1 medium
Garlic - 3-4 cloves, chopped
Olive oil - 3 tablespoons
Salt and black pepper - to taste
Fresh herbs (dill, parsley or basil) - to taste

Instructions:

Preparation of ingredients:

Wash the courgettes and cut them into thin circles.
Cut the tomatoes into cubes.
Chop the onion finely.

Roasting zucchini:

Heat the olive oil in a frying pan over medium heat.
Fry the zucchini until golden brown, stirring occasionally. Take them out of the pan and put them in a separate bowl.

Roasting tomatoes and onions:

In the same pan, add a little more oil, if necessary.
Fry the onion until transparent, then add the chopped garlic and fry it for a few seconds until you feel the aroma.
Add the tomatoes and fry them until you get a medium-thick sauce.

Combining zucchini and tomatoes:

Return the fried zucchini to the pan with the tomatoes and onions. Mix thoroughly.

Seasoning and cooking:

Add salt and pepper to taste. Please note that zucchini can absorb salt, so it is better to add gradually and taste.
Cook the mixture over medium heat for another 5-7 minutes until the courgettes are tender.

Serve the fried zucchini with tomatoes sprinkled with fresh herbs.
